Society Setting The wines




PATERNO Riserva - Chianti DOCG

This Chianti has been obtnained by vintaging our wholesome and well-ripe Sangiovese grapes from the vineyard enjoyng the best exposure. Once placed into French oak barriques it ripened over a period of 18 months, then followed by a refinement period in the bottle wich lasts about four months. Now it has a rich and shiny ruby-red colour, with very slight garnet red reflections and a persistent and strong fragrance of viola and liquorice. Full-bodied, dry, balanced and mellow, rightly tannic, spicy, smooth and round. It happily matches with roast grilled meat, game, tangy and mature cheeses. It is recommended to open the bottle at least one hour before and serve it at the temperature of 20-21°C.




ROTONDO - Chianti

This D.O.C.G. Chianti comes from Sangiovese and Canaiolo grapes from the vineyards situated on the most sun-drenched hills of the Antica Fattoria di Paterno. Its distinct features are the shiny ruby-red colour, pleasanty rich, a delicate and persistent scent of dry, full-bodied, suave and round taste. It matches with roast meat, grilled meats, slightly tasty cheeses and with the traditional dishes of the Tuscan cuisine. It is recommended to serve it at a room temperature of 19-20°C.




SENTIERO - Chianti

This white wine of Tuscany derives from the accurate wine-making at controlled temperature of Trebbiano and malvasia grapes from the vineyards of the Antica Fattoria di Paterno. It has a clear straw-yellow colour, a delicate and scented fragrance and a dry, full-bodied and persistent taste. To fully appreciate its fine and elegant taste, we recommend to serve it at a temperature of 12-13°C as aperitif or with entries and fish courses.




MORBIDA TRAPPOLA - Vin Santo del Chianti

This Vin Santo del Chianti is obtained from the natural wilting of Trebbiano and Malvasia grapes inside a special room called "wilting room". The must deriving from the pressing is placed in oak kegs to start the fermentation and for the following refinement over a period of 4-5 years. The Vin Santo del Chianti has a golden colour with amber reflections, an airy, intense, distinct scent and a smooth, suave and round taste. At the temperature of 18-20°C it accompanies cakes, bitter chocolate, Cantuccini and dry pastries.




SEGNO - Grappa

Today, the Grappa of the Antica Fattoria di Paterno is obtained, just like old times, after having distilled in special steam boilers the dregs of pressed grapes. This procedure preserves the typical organolettic properties of the Chianti grapes.




OLIO - Extra vergine

The olive-groves of the Antica Fattoria di Paterno are located on the hills of Montespertoli, an area especially suited to the cultivation of olive trees. The production techniques, manual harvestiung and cold-pressing of the olive, make it possible to obtain an oil with excellent organolettic properties, a veiled green colour and a fruity flavour.
